Here’s how you’ll bring the K Club’s trailblazing vision to life:
- To lead and manage The Palmer Kitchen team
- To liaise with the Executive Chef with regard to menu suggestions, operational issues and the day to day operations of the Kitchen.
- To be responsible for all food service from the Kitchen including outside areas and the function rooms.
- To respond to and handle guest problems and complaints.
- To ensure that guests are always receiving an exceptional dining experience representing true value for money.
- To be aware of all financial budgets and goals.
- To ensure that all recipes and product yields are accurately costed and reviewed regularly.
- Ensure that the Department’s overall operational budgets are strictly adhered too.
- Ensure that a consistent first-class product of the highest quality is achieved and maintained in all culinary areas, whilst adhering to operational deadlines.
- Ensure that all relevant banquet set-ups are prepared ahead of guest’s arrival and in adherence with company standards.
- To ensure that all food products received into the Kitchen are of the required standard and quality and that they are stored and rotated correctly.
- To assist with the monthly stock takes in the Kitchen
- Ensure that all kitchen operations manuals are prepared and updated.
- Ensure that rosters are entered and updated in the Time and Attendance as required by the company and the payroll deadlines are met.
- To work in close conjunction with the Food and Beverage Director and Executive Chef, to create a yearly marketing Plan for the outlet.
This is how we see you:
- Previous experience in a similar role is essential
- Strong leadership skills with the ability to work as a team
- A genuine passion for food
- Qualification in culinary arts, or similar is desired
- Extensive knowledge of good food handling, food standards, and presentation
- Competence in all aspects of kitchen budgeting to include costing and menu planning, labour costing and waste management
- Experience in HACCP maintenance
